What transforms a simple piece of grilled meat into an unforgettable meal? What elevates a humble bowl of soup into a comforting embrace? What gives Turkish cuisine its soul?

The answer lies in the spices.

Turkish cuisine is renowned worldwide not just for its fresh ingredients and cooking techniques, but for its masterful use of herbs and spices. These aromatic treasures, grown in the rich soils of Anatolia and traded along ancient Silk Road routes, are the hidden magic behind every unforgettable dish .

At KAPYA, we honour this tradition. Every kebab, every meze, every dessert carries the warmth and complexity of Turkish spices. Here’s a journey through the flavors that define our cuisine.

The Essential Spices of Turkish Cuisine

Pul Biber (Red Pepper Flakes)

One of the most iconic Turkish spices, pul biber adds a wonderful aroma with a slight bitter taste. Made by drying hot and sweet fresh peppers in the sun before crushing them, this spice varies from region to region . It appears on almost every table in Turkey, ready to be sprinkled over eggs, kebabs, soups, and yogurt dishes.

Health benefit: Rich in vitamin C, red pepper flakes are believed to strengthen the immune system .

At KAPYA: Our Adana kebab gets its signature warmth from pul biber. You’ll also find it on our tables, ready for you to add your own touch.

Sumac (Sumak)

Perhaps the most uniquely Turkish spice, sumac is a maroon-black powder made from dried, crushed sumac berries. It delivers a sharp, astringent, citrusy punch without adding any liquid . This tangy spice is the secret behind many of our meze and salads.

Health benefit: Sumac facilitates digestion, balances the body’s sugar levels, and is rich in antioxidants .

At KAPYA: We sprinkle sumac over our onion salads, hummus, and kebabs. It’s the finishing touch that brings brightness to every bite.

Kimyon (Cumin)

With its intense, aromatic flavour, cumin is an indispensable spice in Turkish cuisine. Turkish locals prefer their cumin in powder form, and it’s used extensively in meatballs (köfte) and meat dishes. The intense aroma of Anatolian cumin is especially valued for suppressing the smell of raw meat .

Health benefit: Cumin is excellent for asthma, boosts immunity, facilitates digestion, and is beneficial for anaemia .

At KAPYA: Our Beef Manti and Adana kebab both feature the warm, earthy notes of cumin.

Isot Pepper (Urfa Biber)

This unique Turkish chili pepper undergoes a fascinating process – it’s “sweated” under the sun, turning it a deep, purplish black. The flavour is incredibly complex: smoky, earthy, with hints of dark chocolate and raisins, and a slow-building heat .

Health benefit: Like other chili peppers, isot is rich in antioxidants and can boost metabolism.

At KAPYA: This is the signature spice of our Adana kebab, providing depth and complexity.

Karabiber (Black Pepper)

Widely used all over the world, black pepper is an essential spice in Turkish cuisine. The flavoured and bitter taste of black pepper is used in both cooking and at the serving stage .

Health benefit: Black pepper facilitates digestion and fat burning due to its antioxidant effects .

At KAPYA: A staple in our kitchen, black pepper is used across our menu.

Nane (Mint)

With its intense essence and refreshing flavours, mint is a favourite herb used in salads, appetizers, cold juices, stuffed vegetables (dolma), and yogurt dishes .

Health benefit: Mint is good for stomach ailments and helps with respiratory tract issues .

At KAPYA: Our haydari (yogurt dip) is brightened with mint, and you’ll find it in our meze and teas.

Kekik (Thyme)

A plant that grows almost everywhere in Anatolia, thyme is widely used in Turkish cuisine, dried or crumbled. With its sharp aroma, it’s especially preferred in meat dishes – in fact, farmers who feed their cattle with thyme in Anatolia produce the tastiest meat .

Health benefit: Thyme has antiseptic properties and benefits high blood pressure, heart disease, and digestive problems .

At KAPYA: Our lamb dishes are elevated with the earthy, aromatic notes of thyme.

Tarçın (Cinnamon)

A distinctively sweet aromatic spice used in Turkish cuisine since the Ottoman period, cinnamon’s smell and flavours are strong enough to change the whole character of a dish. It’s used both in stick and powder form – in rice for stuffing vegetables, in lamb and chicken dishes, and in desserts .

Health benefit: Cinnamon is a source of polyphenol antioxidants, helps reduce cholesterol, regulate blood pressure, and increase body resistance .

At KAPYA: We add a hint of cinnamon to our braised lamb shank, creating that signature Ottoman depth.

Spice Blends: The Secret of Turkish Kitchens

Beyond individual spices, Turkish cuisine is famous for its blends. While locals tend to use individual freshly ground spices, certain blends have become essential :

Köfte Baharı (Meatball Spice): A blend of coriander, black pepper, cloves, bay leaves, and wild thyme, used to season meatballs and köfte .

Baharat: Arabic for “spices,” this is typically a blend of finely ground spices used as a condiment .

The Science Behind the Flavour: Health Benefits of Turkish Spices

Turkish spices are more than just flavour. Research has shown that spices commonly used in Turkish cuisine contain functional components – terpenoids and phenolic compounds – that have remarkable health benefits .
