Adana kebab is a spicy, hand-minced lamb kebab named after the city of Adana in southeastern Turkey – a region known for its bold, fiery cuisine.

Unlike the more delicate lamb şiş or the familiar döner, Adana kebab is bold, intense, and unapologetically spicy. It’s traditionally made with fatty lamb minced by hand (never a machine), mixed with red pepper flakes and Urfa biber (a dark, smoky Turkish chili), then kneaded until the texture is just right.

The meat is then pressed onto a wide, flat metal skewer and grilled over charcoal – giving it that signature smoky char and juicy interior.

A Short History of Adana Kebab

Adana kebab was born in the late 19th century in the city of Adana, located in southeastern Turkey near the Mediterranean coast.

Local legend credits a man named Hacı Ali – a skilled butcher and cook – with creating the dish. He realized that mincing the lamb with tail fat and flattening it onto a wide skewer allowed the meat to cook quickly and evenly over the intense heat of charcoal.

The dish became a local sensation. Soon, restaurants throughout Adana specialized in nothing but this single kebab. Today, the city has an annual Adana Kebab Festival celebrating its most famous export.

In 2010, the Turkish government registered Adana kebab as a geographically indicated product – meaning that authentic Adana kebab can only be made according to strict traditional methods.
